WHAT IS SAKE?

Sake is a rice wine. It was most likely introduced into Japan from China around 500 BC. Sake usually has an ABV (Alcohol By Volume) between 9% and 16%. It is brewed by converting the starch content in the rice into sugar. This sugar subsequently is fermented into alcohol. This two step process occurs simultaneously as opposed to wine production where it is a one step process where sugar naturally found in wine grapes is fermented into alcohol.

Sakes are usually graded by the mill ratio(percentage of grain that remains after the rice has been polished away). For example, 70% RPR(Rice Polishing Ratio) means that 30% of the riceโ€™s outer layer has been milled away(polished away). There are generally 6 grades of sake listed in order from lowest to highest below:

  1. Honjozo-shu (ๆœฌ้†ธ้€ ้…’) RPR under 70%, small amount of distilled alcohol added

  2. Junmai-shu (็ด”็ฑณ้…’) RPR under 70%, no distilled alcohol added

  3. Ginjo-shu (ๅŸ้†ธ้…’) RPR under 60%, small amount of distilled alcohol added

  4. Junmai Ginjo-shu (็ด”็ฑณๅŸ้†ธ้…’) RPR under 60%, no distilled alcohol added

  5. Daiginjo-shu (ๅคงๅŸ้†ธ้…’) RPR under 50%, small amount of distilled alcohol added

  6. Junmai Daiginjo-shu (็ด”็ฑณๅคงๅŸ้†ธ้…’), RPR under 50%, no distilled alcohol added

Saito, an authentic Japanese Sake made in Kyoto, Japan. Saito was introduced to the market in 2016 and carries some of the best entry, mid-range sakes and finest top grade premium sakes to satisfy every sake lover. Saito combines the precious secrets passed on from generation to generation.

Saito sake is from the Kizakura brewery in Kyoto, Japan. Located in the Fushimi district, the area has an abundance of โ€œFushimizuโ€, underground spring water which is ideal in the process of making sake. In partnership with Asiaeuro and Kizakura brewery, we are bringing you 2 Junmai Daiginjo-shu(highest grade) sakes for you to experience.

Our speaker will also share his tips and secrets on how best to enjoy your Sake as well as explain the nuances of the different Sakes. Learn the art of sake tasting and immerse yourself in a harmonious Japanese-Singaporean cultural experience.

Brewed in Fushimi, the southern part of Kyoto, a place that is blessed with abundant underground iron-free water.

The sake-making process involves the usage of this excellent quality of water, specifically the balance of minerals such as potassium and magnesium that are perfect attributes and composition for producing sake. Coupled with Kyotoโ€™s climate, renowned particularly for its cold winter called โ€œSokobieโ€, it is the most ideal brewing area for producing one of the best sakes in Japan. These factors define the character and taste profile of Saito sake; most importantly being smooth and clean.

Fushimi Inari Taisha

Fushimi Inari Shrine (ไผ่ฆ‹็จฒ่ทๅคง็คพ, Fushimi Inari Taisha) famous for its ten thousand vermilion torii gates, which straddle a network of trails into the wooded forest of the sacred Mount Inari, which stands at 233 meters and belongs to the shrine grounds. Fushimi Inari in southern Kyoto is dedicated to Inari, the Shinto god of rice. Fushimi is the source of clean iron-free water which births SAITO. - @ image credit: tawatchai07

Senior Sake Expert, Kizakura Co., Ltd.

With an illustrious 17-year tenure in the Japanese Sake industry, Daiki Tojo is a luminary in the world of fine spirits. His journey began in 2006 with Kizakura Co., Ltd., one of Kyoto's premier Sake brewing companies. Over the years, Daiki's expertise has traversed continents, spanning 4 years in domestic sales and an impressive 13 years in international sales, with a primary focus on the Asian market. Notably, as the Senior Sales Manager of the International Sales Department from 2018 to 2023, Daiki helmed the entire overseas market, solidifying Kizakura's global presence. Daiki is also a fervent advocate for Sake education, conducting seminars in English to share his wealth of knowledge with enthusiasts worldwide. His legacy is etched in the annals of the Sake industry, a testament to his unwavering passion and unparalleled expertise.
