Introduction to Cérvoles Wines

Cérvoles comes from the La Pobla de Cérvoles region, near the region of Catalonia. The vineyard Cérvoles Cellar places a high emphasis on green and sustainable methods in their agricultural process. There is also a high standard of viticulture processes(harvesting is done by hand, pruning of the vines and yield control) to ensure their wines are of a high quality.

First Course

BBQ Local Squid With Garlic Butter Sauce - a savoury dish with a tinge of zest.
Paprika Crispy Chicken - Fried Chicken slightly seasoned with Paprika spice.

Second Course

Pork Rendang Nachos - Our take on Nachos with a local twist of Rendang(a curry made with herbs,spices and coconut milk).

Trio Liver Pate - a rich & savoury dish.

Third Course

Four Heavenly Kings Vegetables - Brinjal(Eggplant), Longbeans, Ladies Fingers(Okra) and Petai Beans stir fried with Sambal Chincalok Sauce. A well balanced savoury dish with some spices.

Butterfly Prawns with Chincalok Sambal Mayonnaise - Fresh prawns garnished with our house-made Sambal Mayonnaise sauce combines the al dente-bite of the fresh butterfly prawns with our creamy and slightly spicy sambal mayonnaise sauce.

Fourth Course

Char grilled Chicken Chop with house-made Black Pepper Sauce and Mashed Potatoes - Our take on this common local delight incorporates some smokiness from the charcoal grill to elevate this common dish to the next level.

Fifth Course

Sous-vide Beef Horfun - We use hump meat from zebu cattle which is well marbled, soft and tender infused with alot of Wok-Hei(Taste of the Wok) in our Hor Fun.

Red Bean Pancake - Crispy on the outside with Red Bean filling on the inside makes this dish a unique dessert.

A Brief History Of Cérvoles

To be fully appreciated, some projects require a perspective that only comes with time. This is the case of Cérvoles Cellar, a venture first undertaken by Tomàs Cusiné 20 years ago in order to pay homage to an ancestral wine-making land, reclaiming a practice that, at that time, didn’t attract much interest in the world of wine: mountain viticulture.


Used to working with the vineyards on Urgell plains in the land of Castell del Remei, the property was acquired by his family in 1982, for Cusiné the vineyards at La Pobla de Cérvoles. It represented a true revelation and an unbeatable opportunity to rethink his work as a winemaker, taking on a far-reaching commitment to the land of Les Garrigues and its people.

This project also represented a return to the area’s roots although Cusiné did not turn his back on the technological advances). So it was that, in 1997, Cérvoles Celler was created, a winery designed to produce high quality single estate wines, which expresses clearly the territory where they are grown and with its sights firmly set on the ultimate goal: to be the first mountain viticultural project set up in Catalonia.

Cérvoles Speaker & Principal

The Speaker & Principal:Xavier Capero

Xavier Cepero is an experienced Director General with a degree in Economics from the University of Barcelona and an IESE, Universidad de Navarra PDG - Programa Dirección General. He also holds a diploma in European Economics from Keele University in the UK and a Diplomado Superior en Ciencias Empresariales from the University of Barcelona.

Mr. Cepero has extensive experience in the wine industry, having worked for companies such as Grupo CASTELL DEL REMEI & CERVOLES and Grupo TOMAS CUSINE. He has demonstrated exceptional leadership skills in his career, having spearheaded several initiatives such as the integration of seven companies into one group, resulting in an increase in revenue by 3x, doubled the number of countries in exportation, and created a subsidiary in Hong Kong.

At Grupo ESPELT VITICULTORS, Mr. Cepero was responsible for the creation and coordination of the business plan to ensure results, as well as the expansion of the company's international presence. He was responsible for the training of a strategic vision to the group's successor and the opening of a Wine Bar Espelt in Tokyo. In his time at Grupo CASTELL DEL REMEI y CERVOLES, he increased sales from 200,000 to 950,000 bottles in four years, multiplied cash flow by five, and created a network of distributors across 40 provinces.

Mr. Cepero is a skilled communicator, having conducted over 250 presentations and tastings to specialized audiences in Spain and abroad, and obtained more than 1,000 pages of press coverage in four years. He is an accomplished professional with an impressive track record in the wine industry.

Grape Varietals: Macabeu, Chardonnay

Denomination of Origin Costers del Segre, les Garrigues.

An intense, deep and unctuous texture. Barrel fermented and aged 8 months in New French oak.
A precise terroir in Cérvoles Blanc with a remarkable volume, minerality and acidity. Its late-ripening process, the high alcohol concentrations and the low Ph offers us a white wine with elevated phenolic magnitudes. Exotic fruit with boulangerie presents incredible contrasts.

Two plots of Macabeo (Finca Cametes) & Chardonnay (Finca Oliveres) define its assembly. Fermented and aged on their own lees in a “Foudre” of 3.000L (Macabeo) and in French oak new barrels (225L & 600L of Saury, Dargaud&- Jaegle and Berthomieu) with frequent bâtonnage giving it shape. Member of Grandes Pagos de España “Grand Cru’s from Spain” since 2002.

Denomination of Origin Costers del Segre, Les Garrigues

Powerful, volume and elegant. Barrel fermented and aged 12 months in New French oak.

Various orientations and altitudes gives this wine an optimal ripening on the grapes while maintaning relevant freshness. Cold skin macerations guarantee its fruity balance. Culitivated at an altitude between 700 and 800 metres, nestled at the foothills of the Serra de la Llena, the natural border within Priorat region and Serra del Montsant, ,this area typically has scarce rainfall and soft winds that guarantee healthy conditions on the vineyards. Soil structure predominantly has great water retention and is rich in gravels and a marly texture for quality viticulture. The elevation of the vineyards and the temperature contrast in Garrigues region positively impacts the grape skin thickness, encouraging the concentration of anthocyanins and tannins whilst enhancing acidity and freshness.

This young wine represents Cérvoles’ take on verticality and purity, focused on just fruit in its utmost expression. It has an evocative and captivating character, partially vinified with its whole cluster.

Strawberries, blackcurrant, blackberry, citrus jellybeans and deep spices typical of the local grape varietals. The singularity of Cérvoles and the mountain viniculture that is practiced in altitudes over 700m ensures a unique flavour profile.

Cérvoles Cellar Estrats 2019

Grape Varietal(s): Garnatxa Negra, Cabernet Sauvignon, Merlot

Denomination of Origin Costers del Segre, Les Garrigues

Aged 18 months in new French oak casks. The Garnacha is aged in casks from Radoux cooperage (Radoux Blend being an extra fine grained blend), the Cabernet Sauvignon in casks from Taransaud cooperage and the Merlot in François Frères casks. Regular bâtonnage during the first 5 months enhances the blend’s viscosity and volume. Dark cherry red, medium intensity, with highlights of the same hue.

Dense, coloured legs. Intense, pleasant nose with aromas of cedar, cloves, pepper and dried fruit. Aeration reveals the full aromatic complexity of the wine, with spicy and balsamic notes, black fruit jam, plum, hints of tabacco, aniseed, licore and minerality which characterize Cérvoles.Pleasant and voluptuous mouth feel. On the palate, exceptionally mature tannins and well integrated. Good acidity adds liveliness and freshness.
